I don’t know what happened, but this morning I decided to make crepes. I haven’t made crepes in years and I had forgotten how easy they are to make. If you can make pancakes, you can make crepes.
1 cup all-purpose flour
2 eggs
2 tbs sugar
1 tbs cooking oil
In a bowl combine milk, flour, eggs, oil, and sugar. Beat with mixer until well blended. Heat a lightly greased 6 inch skillet. Remove from the heat. Spoon in 2 tbs of the batter, life and tilt the skillet to spread batter. Return to heat; brown on one side only. Invert pan to remove crepe. Repeat with remaining batter, greasing skillet occasionally. Makes 18.
Fill crepes with whipped cream and your favorite fruit.
